Honey Ham and Macaroni & Cheese w/ Stewed Tomatoes


While making dinner [and my blog] has been on my mind, I did not think I would be blogging this soon about a cooked meal. Since yesterday was Veteran's day, and more importantly because Nick has been taking good care of me, I decided to make a quick meal. It was a hit, it was easy and it will warm up a cool Fall night without much effort. 
We had some already sliced cooked ham. I defrosted a few slices so that I could heat it through in the oven. And I figured a quick twist on an easy macaroni and cheese dish would compliment the ham well. 
Here are the ingredients you will need:
  • sliced cooked ham [however much will feed you and your family]
  • 1 can cheddar soup
  • 1 can milk + 1 tablespoon
  • 1 tablespoon flour
  • 1 tablespoon butter
  • 1 block of cheese - whatever flavor you prefer. I used pepper jack to give it spice and it was a nice twist to macaroni and cheese
  • 1 can stewed tomatoes
  • pepper
  • chili powder
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 tablespoon lemon juice
  • 1 box macaroni 
Directions for the macaroni:
  • preheat oven to 425 degrees F
  • bring several quarts water [& salt] to boil, add macaroni and cook for about 8 minutes [or until cooked to taste], drain
  • meanwhile, melt butter and whisk flour and 1 tablespoon milk together
  • add can of cheddar soup and can of milk, dash of chili powder and pepper, whisk together until warm
  • cut block of cheese into small chunks and add to cheddar soup mixture and stir until completely melted together
  • pour cheese over  cooked macaroni noodles, stir in can of stewed tomatoes, and mix well until evenly coated
  • grease casserole dish and pour macaroni mixture into dish 
  • bake for 15 or 20 minutes [or until cooked to taste]

Directions for the Ham:
  •  mix honey, brown sugar and lemon juice together
  • coat both sides of each ham slice with mixture
  • bake ham for approximately 10 minutes 


The meal was easy and yummy.  Believe me, I am not in the best condition right now and I was able to withstand this kitchen concoction last night! Just as a side note, if you wanted a cheesier macaroni and cheese dish you could shred some cheese to the top of it before you bake it and let it go until it's golden brown!!
