Deep Fried Macaroni and Cheese Bites

Nick and I are going to deep fry our turkey this year. I mentioned the possibility of deep frying our turkey to my mom and she graciously bought us a turkey deep fryer. How awesome is she? However, I wanted to make something in the deep fryer before making our bird, so last night I deep fried macaroni bites. This is at least a 24 hour process, just to forewarn you [easy, but long!]

What you will need will depend on your taste, time and willingness to go all out. I did not have the patience to make homemade macaroni and cheese so I made kraft. Next time I will definitely make homemade macaroni and cheese with LOTS of extra cheese. MMMMM, just thinking about these little guys makes me smile. That's how good they are!!

Okay, so let's recap:

  • you will need about 1 cup or 1 1/2 cups uncooked pasta and at LEAST 4 cups of cheese for the macaroni; 3 cups of cheese will be needed for the macaroni and 1 cup will be needed for the topping  [season however you like it!!!] 
  • 3 tablespoons of butter, melted
  • 3 cups panko breadcrumbs [or any kind of bread crumbs, really]
    • 1 cup to mix with butter for topping
    • 2 cups for dredging 
  • 2 cups all purpose flour
  • 1 teaspoon cayenne pepper
  • 4 eggs, beaten
  • 1 gallon peanut oil
  • preheat oven to 350 degrees F
  • make your macaroni and cheese
  • pour the macaroni and cheese into a greased 2 quart rectangular baking dish
  • to make the topping, combine melted butter and 1 cup panko in a small bowl. Sprinkle remaining 1 cup cheese evenly over macaroni, then sprinkle with panko mixture
  • bake in oven for 30 minutes
  • let cool completely, then cover and refrigerate over night
Frying Instructions:
  • fill fryer with oil
  • heat to 350 degrees F [will take approximately 15 to 20 minutes]
Breading Instructions:
  • in the meantime, cut the refrigerated casserole lengthwise down the middle, then across into 1 inch bars
  • for breading, set up three bowls
    • in the first bowl, combine flour and cayenne
    • beast eggs in second bowl
    • place panko in the third
  • dredge the macaroni bars first in flour, then the egg, then the 2 cups panko and place on a baking sheet
  • work quickly and don't over handle
  • let the bars rest in the refrigerator for 20 minutes to set
  • fry bars, 3 at a time for approximately 2 or 3 minutes or until golden brown. 
  • season bars to taste and serve immediately

These macaroni bites were AWESOME!!! I love them and I am so excited that I will be able to make them!! Even if you are watching your figure this holiday season [or any time] these are well worth the extra calories. I promise you!!!
