Easy Chicken Pot Pies and Broccoli Pot Pies

Last night I made an easy and fun chicken pot pie concoction! It is much simpler than regular chicken pot pie and it's fun! Additionally, I made chicken and broccoli pies as a little side dish to go with the pot pie creation! It was such a cool meal, I would recommend anybody try it!

This is what you will need for the Chicken Pot Pies:



  • 2 (18.6 oz) cans Progresso Chicken pot pie style soup
  • 2 cups frozen corn, thawed
  • 2 cups frozen broccoli, thawed
  • 1 can buttermilk biscuits

  • Heat oven to 375 degrees F
  • Heat vegetables in microwave until thawed
  • Heat soup either on stove or in microwave until warmed through
  • Mix it all together
  • Divide soup mixture between 4 ramekins 
  • Top each with 1 biscuit and place dishes on cookie sheet
  • Bake 22 to 25 minutes or until biscuits are golden

Here is what you will need for the Broccoli Pot Pies:
  • use the remaining 6 biscuits from the package used to make the soup
  • 1/2 cup cheese
  • 1/2 cup broccoli, thawed
  • 1 (10 3/4 oz) can cream of chicken soup
  • 1/2 cup cubed cooked chicken

  • Heat oven to 375°F. Separate dough into 10 biscuits. Place 1 biscuit in each ungreased muffin cup; firmly press in bottom and up sides, forming 1/2-inch rim over edge of muffin cup. Spoon about 1 tablespoon each of cheese  into each biscuit-lined cup. Press mixture into bottom of each cup.
  • cut large pieces of broccoli in half
  • in large bowl, combine broccoli, chicken and soup, mix well
  • spoon about 1/3 cup of chicken mixture over cheese
  • bake 375 degrees for 20 to 25 minutes or until edges of biscuits are deep golden brown

This was such a good meal; it really warmed up my stomach and night!! Instead of having to go through all of the tedious steps of making homemade pot pie this is an easy and great variation on it!! While I will end up making the old fashion, down - home comfort pot pie, this whips up very fast!! It did not hurt that I had everything I needed right here in the house!! Major score!!
