Cheesy Cheeseburger Bake

Last night I made a Cheesy Cheeseburger Bake and it really did remind me of a cheeseburger! I was in need of a recipe that would not consume my entire afternoon and I stumbled across this great concoction. I made it my own by leaving out the onions and adding jalapeños, but isn't that what cooking is all about after-all? The best part about the meal was that I had EVERY ingredient already in our house! That was the cherry that topped off this flavorful meal. 



Here is what you will need: 

  • 1 to 1 1/2 pound lean ground beef
  • 1 can condensed Cheddar cheese soup
  • 1 1/2 jalapeño finely diced
  • 1/4 cup milk
  • 2 1/4 cups baking mix
  • 3/4 cup water or chicken stock
  • 6 oz shredded Cheddar cheese

Directions:
  • Heat oven to 400 degrees F
  • Generously spray 13x9 glass baking dish with cooking spray
  • In 10 inch skillet, cook beef and jalapeño over medium heat, stirring occasionally, until beef is browned; drain. Then stir in soup and milk
  • In a baking dish, stir baking mix and water until moistened [add some cheese to the mixture, it's a great way to work in the sharpness of the cheese]; spread evenly
  • spread beef mixture over batter then coat with cheese
  • Bake for 30 minutes 


I loved this meal. It was quick, easy and so full of great cheeseburger flavor!! This is one of my favorite meals to date, even though it is mildly simplistic!! I love the the baking mix as the foundation of the meal... it is warm and flaky! I would recommend this to anybody.
