Layered Macaroni and Cheese Casserole

I made a layered macaroni and cheese with ground beef casserole last night that had a great taste to it; it reminded me of Hamburger Helper. I used to eat it when I was younger and this was a cool twist on an old-time classic.

Here are the ingredients you will need:

  • a box of macaroni
  • 2 pounds lean ground beef
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1/2 cup chicken stock
  • 1 can condensed cheddar cheese soup
  • 2 (8 ounce) block cheese cubed
  • 1 cup bread crumbs
Directions:
  • Heat oven to 350 degrees F
  • Spray 2 quart casserole with cooking spray
  • cook and drain macaroni as directed on package
  • meanwhile, in a large skillet, cook beef, season with favorite seasoning, stirring occasionally until beef is thoroughly cooked; drain
  • in a saucepan, melt butter over medium heat
  • stir in flour, stirring constantly, until bubbly
  • stir in milk, cook 5 to 6 minutes, stirring constantly, until mixture thickens slightly
  • stir in broth and remaining 1/2 teaspoon salt, cheddar cheese soup, and cheese; whisk until cheese melts then remove from heat
  • spoon 1/3 of the macaroni mixture into casserole; top with half of the beef
  • layer with another 1/3 of the macaroni mixture, remaining beef and remaining macaroni mixture
  • top with bread crumbs
  • bake uncovered for 25 to 30 minutes or until bread crumbs are golden brown

This was such a good tasting meal and reminded me of my childhood!! I recommend anybody giving this a try , especially if you have to feed a bunch of people because these small ingredients really add up to a LOT of food!!

Until next time, happy experimenting! :)
