Salsa Chicken with Cheesy Rice

Good Morning Friends! It’s Tuesday, it’s dreary & I am enjoying two of my very favorite drinks: hot chocolate with TONS of whipped cream and an ice cold Coca Cola! Most people would think it a crazy combination, and normally I would not drink the two at the same time but I had a slight dilemma this morning.

I started taking vitamins last week. I mean, late last week. I think my first pack was consumed on Friday {and I’m already over the multi-vitamins}. Do you want to hear the story behind this vita-fad? It is a pretty short story – well, you’re going to be getting the pretty short version.

I have this fear that I am not consuming enough nutrients or I am losing nutrients. I am having these heart aches and my doctors insist there is nothing malicious going on; and, while I do not believe them, I have to go with it. All of my tests have come back okay with the exception one low level of something or another {honestly, I cannot remember what was low}. Either way, the nurse told me the level was not even low enough to be concerned. CONCERNED? You’re not concerned, but your patient is {now}. I think it was potassium, and the internet has told me that low potassium may mean heart pain? Either way, Nick thought it was a good idea to start taking vitamins.

These vitamins are the size of horse pills. And they make me feel sick. That is beside the point. I cannot take the pills without the soda because they are too big to swallow without some fizz. However, I was craving hot chocolate this morning and made it without realizing Nick had kindly taken out a pack of vitamins for me {so that I would remember to take them}. Therefore, I have a hot chocolate and a soda sitting next to the computer. And I am desperately trying to finish these pills.


On top of all of this vita-crap, we have an infestation of wasps on our deck. What the heck universe?! What did we do to deserve this? I mean, I know there was some malice in my energy when I sent Nick out a couple of weeks ago to kill the single wasp that was whisping around wreaking havoc on my feng shui energy. But these things need to know who is boss. I thought if I had Nick kill one the word would be out about what happens to things that intrude. Apparently I was wrong. Now I have to wait until Thursday for the professional wasp killer to come in and handle the situation.

Horrid things they are.

Now that you all are caught up on my inner personal drama, let’s get to the delicious part of the blog. Today I have a recipe packed full of great flavor and it is super easy to make. Take a look at this scrumptious Salsa Chicken and Cheesy Rice.

Nutritional Information:

Here is what you need:

  • 1 jar salsa
  • 1 large {or 2 medium} chicken breasts, sliced thin
  • 1 ½ ears corn, cooked & shucked
  • 1 can tomato sauce
  • 1 to 2 tablespoons garlic powder
  • 1 tablespoon Cajun seasoning
  • Hot sauce
  • 1 ½ cup rice, uncooked
  • 1 cup cheese, shredded


  • In a medium skillet, over medium heat, cook your chicken then remove from heat
  • In another large skillet, add the salsa, corn, tomato sauce and spices and cook over low heat

  • In the meantime, shred or slice the chicken {whatever you like} and add to the salsa mixture

  • Incorporate fully and allow to warm through for about 15 minutes
  • While the salsa mixture is heating, cook the rice according to the directions
  • When you remove the rice from the heat, add the shredded chicken and cover to allow the rice to cook and the cheese to melt in
  • When the rice is completely cooked, stir to make sure the cheese is fully incorporated and you can eat add the rice to the salsa mixture OR you can add a couple of spoonfuls to a plate and top with a few scoops of the chicken and salsa mixture

I loved this dinner. It was so easy to make and cooks up so quickly! The flavors of the salsa and chicken mixes perfectly with the creaminess of the rice filled with cheese. LOVEEEE!
