Buffalo Chicken & Bleu Cheese Stuffed Wonton Cups

Good Morning friends! It is Wednesday, can you believe that? I am having a hard time believing we are already halfway through the week. I’m sitting here again trying to eat all of these vitamins. It seriously takes me an hour and an entire can of coca-cola to get these suckers down.

I have a new pill to take today. I was not feeling very well yesterday, so much so that I thought I was going to end up in the emergency room. Instead I ended up in the doctor’s office last night, thank goodness. Neither Nick nor I like visits to the E.R. I was having these chest pains that I could handle; well, I was handling the pain until yesterday. The pain increased substantially AND my arm went all weird. It freaked me out and I immediately called the doctor.

FYI: I love my new doctor. It’s always a difficult decision to find a new doctor. I have had two doctors and one specialist in my entire life {with the exception of the one in Arizona that does not really count}, so I became very comfortable with those physicians. When we moved to NoVa, I knew I was going to have to find a doctor. I did some research, I checked out a few people and I found my doctor. She’s only a couple of years older than me and she makes me feel like a person, not a patient. I like her. She passes the first test.

Anyway, she thinks I am too young to be dying or having a heart attack so she set up a stress test. She also told me to take Nexium because reflux, apparently, causes the same symptoms as heart problems. Honestly, I’d rather have reflux than something more serious. I have to change my diet. She listed a slew of foods that can irritate people who have reflux issues and it was my entire diet. Wait a minute…rewind? New diet of just lettuce seems to be on the horizon. Oh boy!

I have a hard time believing that this is just a reflux issue.

I wanted to take a minute to say THANK YOU to all of you who sent me well wishes yesterday. It means a lot to me that you took a minute out of your day to send me get well wishes. It means more to me than you could ever know!

Now let’s get down to the food.  Today I have another version of wonton cups! Are you ready?? Take a look at these delicious Buffalo Chicken with Bleu Cheese Cups! It’s like chicken wings with bleu cheese, but with a twist!

Nutritional Information:
Serving Size: 3 stuffed wontons
Calories: 172.5
Fat: 6.2 g
Carbohydrates: 10.8 g

Here is what you will need:

  • 6 oz chicken, cooked & sliced into small chunks
  • 3 ounces bleu cheese
  • 12 wonton wrappers
  • Hot sauce


  • Preheat oven to 400 degrees F
  • After you have sliced the chicken into small chunks, put all of the chicken into a Ziploc bag. Pour hot sauce into the Ziploc bag and shake around so the chicken is completely coated in hot sauce

  • Lightly grease the cupcake tins and put a wonton wrapper in each of the cupcake tins

  • Divide the hot sauce coated chicken so that each wonton wrapper is filled ¾ of the way full with chicken
  • Top with shredded bleu cheese

  • Bake for about 10 minutes or until the wonton wrappers are golden brown
  • EAT!

These little guys were AMAZING! I think it is difficult to mess anything up when you put it in wonton wrappers and bake it. I could be wrong though. So far, however, I have had a 100% success rate with anything I put in the wrappers!

I love hot wings. I love bleu cheese. The logical deduction was stuffing them full with buffalo chicken and bleu cheese. It’s like a bite sized version of one of my favorite foods. You should all make these tonight. I am so excited for other people to try them!
