Parmesan Crusted Roasted Red Potatoes

Happy Monday Foodie Friends. I cannot believe the weekend is already over; it seemed to fly by so quickly. It’s been quite the few days. My mom came to visit on Wednesday afternoon. Initially she was coming down to watch Pippy while Nick and I went to Homecoming at W&J. However, as the date approached, I realized I did not really want to go to my Alma Mater. It seems like so much time has passed and relationships that used to be strong and in tact have crumbled. In reality, I was only going to see my friend Leslie and eat at Old Mexico, which happens to be one of my all-time favorite Mexican restaurants. When I was living in Pittsburgh for graduate school I was constantly debating whether I wanted to drive the 40 miles to Old Mexico. I only made the trip twice. It was well worth it, and the first time it was fairly easy to get Nick down to Washington because I wanted him to see my campus. There was no way I was leaving my small college town without filling my belly with Old Mexico.

Anyway, my mom still decided to come. I was not sure that she would, but I am glad that she did. I think she is leaving tomorrow, but I don’t want her to go. It’s always sad to depart each other. I am her only child, so we had a relationship that was more of a friendship when I was growing up, instead of a traditional parent - child relationship. And while there are some downfalls to having that kind of a relationship growing up, there was a bunch of utility having a mom-daughter friendship. I could go into it all, but she is my best friend, and always has been.

Tomorrow is going to be sad. Nick will already be at work when my mom leaves, so I’m going to be all alone. I am not looking forward to it.

I digress.

I know today is Monday, and that means I should have a Meatless recipe for you. I have a pretty basic Meatless Monday recipe for all of you today. Today I have Parmesan Crusted Roasted Red Potatoes. I know that this is a relatively simple recipe, but it will liven up any meal you have as a perfect side dish. I promise you.

Nutritional Information:
Servings: 1/4th
Calories: 180
Fat: 3.8 g
Carbohydrates: 32.5 g
Fiber: 2.5 g
Protein: 6.25
Points+: 5

 Here is what you will need:

  • 5 red potatoes, large dice
  • 5 tablespoons Parmesan Cheese
  • 1 tablespoon ‘faux’ butter {like I Cant Believe Its Not Butter!}, melted
  • Garlic Powder, to taste
  • Pepper, to taste {I did not use salt because I used garlic powder. Though feel free to add some to your liking.}

Directions:

  • Preheat oven to 350 degrees F
  • Dice the potatoes into large chunk and boil in a large pot of water for about 5 minutes
  • Remove from water and allow to cool slightly
  • Incorporate the potatoes, melted butter, garlic powder, pepper & Parmesan until the potatoes are completely coated
  • Lightly grease a baking dish and place the potatoes in the bottom of the dish

  • Cook for 20 to 25 minutes
  • Remove from oven, taste and re-season if necessary
  • Enjoy!!

Like I said, this recipe is pretty basic and incredibly simple to make but sometimes we need that type of side dish. It’s perfect for many reasons, including the simplicity. Once you create the structure and put it in the oven you can forget about it for the 25 minutes you’re preparing the remainder of your meal.

Plus, who does not like Parmesan cheese crusted on some delicious potatoes? It’s the perfect combination!!
