Ghostly Meringues

Happy Halloween Foodies! I cannot believe it is already October 31; can you? As an adult I never really got excited for Halloween. It is just nothing something I was ever really interested in. Don’t get me wrong, when I was a kid I sought candy out with a clear mission to get the most I could get in the couple of hours I was allotted. I did not know until I was older that I went to previously selected homes to collect my sugary goods. If you remember, I am an only child so my life was beyond over-protected. I would not feel too sorry for the younger me, I made out like a bandit; the pre-selected homes were family friends that gave me enough candy to last a year, which it never did.

As I transitioned into middle and high school, I fell out of love with Halloween. I usually spent time with friends or with my mom; I even had friends over for a sleep over. Even today I am uninterested with getting all dressed up to go out to some bar or grown up party. Call me boring, but it is just not my forte. With all of that being said, I do have one thing to look forward to each Halloween. I get to pick out the BEST costume ever for Pippy. He is such a good sport. This year he is super cute in his little costume. See?

Keeping with the Halloween spirit today, I have a fun and kid friendly treat. I grew up eating chocolate chip and peanut butter chip meringue cookies. My mom used to make them for me and I was in love. Even into college, she would send them to me as a treat around finals. When I think of meringues today I shiver with both excitement and fear. Wondering why? These little treats are incredibly sweet. Sometimes they are just too much for me now. Transitioning into adulthood and losing weight must have had an affect on my taste buds because I can no longer eat these little guys like I used to.

I should tell you that I never made meringues by myself before. And, maybe by unfortunate design, I did not request the recipe or preparation for them from my mom prior to making them. I just winged it. I winged it with these Ghostly Meringues. Aren’t they cute?!

 Here is what you will need:

  • 4 egg whites
  • 1 cup sugar, blended for 30 seconds
  • ½ teaspoon vanilla {maybe a tad more}
  • Mini chocolate chips


  • Preheat oven to 200 degrees F & place he rack in the center of the oven
  • Line a baking sheet with parchment paper
  • In the bowl of your electric mixture {with the whisk attachment}, beat the egg whites on medium – low speed until foamy

  • Add the sugar, a little at a time, and continue to beat until the meringue holds very stiff peaks {this may take a little while, don’t give up!}

  • Beat in the vanilla extract

  • Cooker’s Note: You will know the ingredients are fully incorporated when you rub a small amount of the mixture between your fingers and it does not feel gritty. If it does, continue beating!
  • Transfer the meringue mixture to a pastry bag and pipe small mounds of meringue onto the parchment paper lined baking sheet
  • Carefully press to mini chocolate chips into the mound, which will serve as eyes
  • Bake the meringues for about 1 to 1 ½ hours
  • Turn off the oven and allow the meringues to finish cooking for several hours. {My mom would leave them in the oven all day or through the night. If you want to do that, that is absolutely fine!}
  • Enjoy!!

These little guys are so fun! Your kids will love getting involved in the cooking process & they will really enjoy the end result. I hope you all give these sweet little ghosts a try!
