Open Faced Chicken & Mushroom Grilled Cheese Sandwich

Happy Thursday! It seems like life flew by me yesterday. I had grand plans for dinner and once I committed to it, there was no turning back. That means we did not end up eating until later last night. However, I knew Nick was starving when we got home last night and I could not make him wait until 7:30 pm. So as I was making this delicious soup, I whipped together a sandwich that I thought he would really love.

We had some chicken, mushrooms, some English Muffins, hot sauce and cheese. It seemed like the making for a perfect grilled cheese sandwich. I love grilled cheese sandwiches and the best part is they are so versatile; you can never screw up a grilled cheese.

So while Nick was outside talking to one of our neighbors, I started to prep this sandwich. I was kind of worried as I was preparing the sandwich because I did not know how long Nick was going to be outside. He was talking to Will who is a soldier and owns one of the cutest dogs alive {please don’t tell Pippy I said that. Pippy is the CUTEST dog, but Will’s pup comes pretty close.} After Will came home from his last deployment, he needed a companion and adopted a Pit bull. I mean, Pit bulls have that rough and tumble kind of reputation so the fact that this big bad soldier adopted one was not unordinary.

However, Will does not have a pit bull. He has some fur ball of a puppy right now that sees a person and pummels them. Pancha I think her name is. Something about Free, I think? Either way, I call her fluffy cotton ball when it’s just Nick and I because that is what she looks like. I love her. Anyway, Will’s sister rescued this little fluffy fur baby from the side of the road. That is the truth. Because Pancha is a wildcard, meaning she pummels everybody she sees for love and attention, Will’s sister could not keep her. Yep, Pancha was pummeling her small children and wreaking havoc on her life. Will gave his sister the pitbull he adopted after his deployment and is now the fur dad to Pancha. How stand up is that? He loves his puppy, even if he won’t admit it to the rest of the world. Remember he is a soldier.

Anyway, he works long hours just like Nick. So I mentioned to Nick that I would love to watch Pancha during the day when I can and he took the opportunity to go hang out with Will. I mean will is a stand up guy, stand up soldier and a high rollin’, very important guy in the military. He & Nick do very similar {high profile} types of things in the military and they LOVE the notoriety that comes along with their M.O.S.

They. Are. Heroes.

Anyway, back to the sandwich. I prepped everything for this sandwich and by the time it was in the oven Nick walked in {whew… it was a huge relief.} It was super easy, super tasty and perfect for a quick meal. Anybody in your family will love this Open Faced Chicken & Mushroom Grilled Cheese Sandwich.

Here is what you will need:

  • 2 ounces chicken, cooked & sliced thin
  • 3 or 4 mushrooms, sliced thin
  • 2 ounces cheese, two thin slices
  • Hot sauce
  • Balsamic vinaigrette

Directions:

  • Preheat oven to 350 degrees F
  • Slice English Muffin in half
  • In a medium skillet, add the chicken and mushrooms and cook over medium heat

  • Add some balsamic vinaigrette and a little hot sauce
  • Sauté until the mushrooms are completely cooked
  • Remove from heat

  • On the English muffin, swirl a little hot sauce as the base
  • Add the chicken and mushroom mixture to each half of the English muffin

  • Top each half with a slice of cheese

  • On a baking sheet, bake the sandwich in the oven for about 10 minutes or until the cheese is melted to your personal perfection
  • Remove and serve!

Nick LOVED this open-faced chicken and mushroom grilled cheese sandwich! See how versatile a grilled cheese can be? I am not a huge fan of mushrooms so I didn’t have any of his sandwiches; plus, I was busy trying to make the soup. He loved it. He kept making the ‘oh, mmmm’ sound. I love when I get that kind of feedback.
