Coconut Chicken Nuggets

Happy Monday foodies!! I hope you all had a great weekend! Nick and I sure did. We drove up to Pennsylvania this weekend. Nick had a long weekend because of Veteran’s Day, so we decided to take care of a little business and also have a little fun. We had to take the car in for service and, luckily, we got a loaner from BMW. They gave us a brand new x5, which happens to be the car we are looking to purchase. So we’re not sure if it was a coincidence or if there were some {big brother} covert techniques going on behind the scenes. Either way we had a great time test driving it. We still have some research to do and some waiting before we make any big decisions, but I am incredibly excited about the prospect of owning another {or maybe 2}new BMWs. I LOVE this brand and, if it is up to Nick and I, we will forever stay with BMWs.  

We had a great time driving it to central Pennsylvania to visit my momma for a couple of days and were not so excited when we returned it. However, the disdain did not last long because our beautiful car was all shiny and new looking; and, we were on our way to see Nick’s dad. I love Joe. He’s a great guy. Anybody would love to have a father as great as Joe. And I am lucky enough to be dating one of the apples from the tree, so I get the best of both worlds: an awesome dad and an awesome man. Nick is a stand up guy and it’s because he learned some great character traits from his dad. Thank goodness for good guys, right?

Nick’s dad just bought a new 5 series BMW – the GT. It’s such an incredible car. The only downfall that we can find with the car is the trunk space. For such a long car there is a relatively small trunk space, which is another reason Nick and I like the x5. If we had our choice we would probably want the x6 {or the x6m} but it’s a $100,000 car. Can we say, I don’t think so Nicholas?! We could buy two cars for the price of the x6. Nick will have that car one day, just not right now. Anyway, Nick asked his dad if we could borrow his car for a couple of days so we could get a feel for it {maybe I can convince Nick to go with the GT??} and JOE SAID YES!! Nick told me and I could not believe it. This car is incredible. It has all of the bells and whistles on it. It’s phenomenal. It’s going to be hard to give it back.

Anyway, let’s recap: loaner car, GT, visits to mom & dad. Oh and we snuck in a little visit with one of our best friends, Scott. All in all it was a successful weekend! I wish the weekend did not end!

Moving right along – with all of the excitement I didn’t have time to blog on Friday. I had a great recipe, too! So you’re going to get it today! Today I have an awesome recipe for Coconut Chicken Nuggets! Oh yeah!

Nutritional Information:
Servings: 7
Serving Size: 4 chicken nuggets
Calories: 216
Fat: 9.7 g
Carbohydrates: 3.4 g
Fiber: 2.2 g

 Here is what you will need:

  • 2 large chicken breasts
  • 1 ½ cups shaved coconut
  • 2 egg whites
  • Salt and pepper

Directions:

  • Preheat oven to 400 degrees F
  • Cut the chicken into small chicken nuggets
  • Season with salt and pepper
  • In a bowl, whisk the egg whites until they are frothy and soft peaks form
  • In another bowl add the shaved coconut
  • Lightly grease two baking sheets
  • Dredge each piece of chicken in the egg wash and then the coconut

  • Place each piece of chicken on the cooking sheets
  • Lightly grease the top of the chicken before putting it in the oven
  • Cook for 10 minutes, then flip and cook for an additional 3 minutes or until the chicken is fully cooked 

These little guys are so delicious! This would be a great kid-friendly recipe {thus the reason I was planning to blog about them on Friday!} You can get the kids involved with the dredging process, they will LOVE helping make their dinner, especially this one! Make sure you don’t allow them to cross-contaminate anything! It’s important to always wash your hands when you are working with raw meat!

I hope you all give this recipe a try. It’s such a great recipe and yields a ton of nuggets. I think we had almost 30! HELLO?! That’s so awesome! It’ll feed the whole family!
