Chocolate Caramel Cookies

I made chocolate caramel cookies yesterday for Nick and his coworkers! They turned out better than I expected and the caramel inside the deep chocolate cookies was a great touch of flavor. I would love to figure out something to make with just the cookie dough because it is delicious on its own. I heard through the grapevine that they were a hit, so I have to believe it. I had to mentally restrain myself from eating one every few minutes as they were cooling.



Here are the ingredients:


  • 1 1/4 cup all purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 5 tablespoons butter
  • 7 tablespoons unsweetened cocoa
  • 2/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1/3 cup plain yogurt
  • 1 teaspoon vanilla extract
  • caramels, rolled into little balls - 
    • if you can find soft caramel, that would be best but I used the little wrapped caramel squares. I cut them in half and microwaved them for about 15 seconds then rolled them it was much easier that way!
  • preheat oven to 350 degrees F
  • lightly coat two baking sheets with cooking spray
  • put the flour, baking soda and salt into a measuring cup, holding over a bowl sift all of the ingredients together into the bowl
  • Melt butter in a large saucepan over medium heat
  • Remove from heat; stir in cocoa powder, and sugars
  • Add yogurt and vanilla, stirring to combine
  • Add flour mixture stirring until moist
  • Wrap chocolate dough around each individual caramel balls
  • Place balls on cookie sheets and bake for 10 to 12 minutes or until almost set
  • Remove from oven, cool for a minute and remove to a cooling rack!
This recipe makes about 2 dozen cookies, so make sure to roll enough little caramel balls! These little guys are best eaten immediately, in my opinion. Or maybe I used this excuse to justify eating as many as I could in a short period of time. In reality, I only had one! I know, that is some real self control. But I noticed that as the cookies cooled, the caramel harden slightly in the middle. However, the moisture of the cookie dough pairs well with the slightly hardened caramel. Now I'm not saying it is HARD, just caramel-y, which is great! :)
