Homemade Pizza - Anyway you like it!


I was a busy little bee in the kitchen yesterday! I got a great idea to bake cookies for Nick and his co-workers, again. They tend to get things I crave; meaning I was craving cookies yesterday so I made the kind I wanted, saved some and ate a few and sent the rest away. This time I reluctantly sent them away because they were my favorite cookies growing up. We'll get to those another day; we have more important things to discuss right now. I wanted to make something spectacular for dinner last night and I went all out with Homemade Pizza! I also made a little something homemade to go with it, but you will have to wait for another day to see what it is. It is well worth it, I promise!


Lets get back to the pizza. I made a bunch of dough so that we ended up with three 10 or 12 inch pizza balls. It was so much fun to make three different pizzas; we were able to make the perfect tasting pizza for our taste buds. However, I think next time I will be more creative with the toppings but for the first time it was great! I also made some pizza sauce. While I cheated a little with using canned tomatoes, the small additions that I made created the perfectly sweet tasting sauce!



Let's get down to what you will need for the process that stands before you:

First, the ingredients for the dough:


  • 1 1/2 cups warm water - somewhere between 100 to 110 degrees F, plus some extra if you need later
  • 1 (1/4 ounce) packet active dry yeast
  • 5 cups all purpose flour, plus some extra if you need it
  • 1 1/2 teaspoons fine sea salt
  • 1 1/2 teaspoons sugar
  • Olive oil, for drizzling 
  • Yellow Corn meal
  • Put the water in a small bowl and add the yeast, stirring until it is dissolved
  • In a large bowl, whisk the flour, sugar and salt together
  • Add the yeast mixture and stir until soft dough forms
  • If the dough is too dry add a tablespoon of extra water at a time; if the dough is too sticky add a tablespoon of extra flour at a time
  • Transfer the dough to a floured work surface
  • With floured hands, knead the dough until it becomes smooth and elastic, about 10 to 12 minutes
  • Drizzle the inside of a clean bowl with olive oil
  • Put the dough in the bowl and cover loosely with plastic wrap or a damp kitchen towel
  • Set the bowl in a warm, draft-free place, until the dough has doubled in size, about 2 hours
  • Using a fist, deflate the dough in the center and cut into 3 equal - sized pieces
  • Form the dough pieces into 3 balls and put into 3 oiled bowls
  • Cover each bowl loosely with plastic wrap or a damp kitchen towel and let rest for 1 hour
  • Remove the dough and USE IT or you can wrap it in plastic and refrigerate for a day. I suggest USING it!! 
Ingredients for the Sauce:
  • 3 garlic cloves, minced
  • 1 jalapeño, seeds removed, minced
  • 1 can (28 ounce) tomato puree
  • 1 can (28 ounce) crushed tomatoes
  • 2 tablespoons brown sugar
  • 1 tablespoons Italian seasoning
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • pinch of cayenne pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 pound cooked hot Italian sausage finely chopped
  • 1 to 2 tablespoons olive oil
  • In a large saucepan, saute garlic and jalapeño in oil until tender
  • Stir in the remaining ingredients, boil
  • Reduce heat; simmer uncovered for at least 30 minutes or until sauce reaches your desired thickness
  • I had it simmering on the stove for the duration of the pizza creating... I'd say about an hour or more. But that is simply because the whole pizza process took longer than I expected!!
Now how do we cook these little doughy balls of heaven? Good question!
  • Preheat the oven to 450 degrees F
  • Roll out the dough balls into circles or whatever oblong version of a circle you want
  • Assemble anyway you want, sauce, cheese and toppings; toppings sauce and cheese; cheese, toppings, sauce... IT DOES NOT MATTER! Make your pizza ANYWAY you want so that you are most pleased with how it looks and tastes
  • Once you assemble your pizza, slightly grease a pizza wheel and sprinkle corn meal on it to make sure the pizza does not stick
  • Cook for about 15 minutes or until your pizza is done perfectly to your taste! You can cook it for less time or more time - it is up to you!! 
Now it is time to EAT, EAT, EAT!!! Last night we had three types of pizza:





(1) Ham and Pepperoni










(2) Sausage



(3) Extra Cheese








This is such a great meal to make with your family or for your family! In fact, given the opportunity I may have a pizza party and get some friends involved or just cook a bunch of pizzas' for some friends. We will see. Pippy does not approve of most people so what he says goes! :)
