St. Patrick's Day Cupcakes

To celebrate St. Patrick's Day, I will be blogging a new treat each day of this week! Today I am excited to share the St. Patty's Cupcakes I made! They are really good and incredibly moist, which is always a pleasant surprise!

Yields: Between 12 and 18 cupcakes; Serving Size: 1 Cupcake
Lets get down to business; here are the ingredients you will need:
  • 1 3/4 cup flour
  • 2/3 cup sugar
  • 1 package instant lemon, vanilla or pistachio pudding mix
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/4 cup milk
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • green food coloring
  • cream cheese or vanilla frosting [I used both!]
Directions:
  • Preheat oven to 375 degrees F
  • In a large bowl, combine the flour, sugar, pudding mix, baking powder and salt
  • In another bowl, beat the eggs, milk, oil and vanilla
  • Add the dry ingredients and mix until blended
  • Fill paper - lined muffin cups 3/4 of the way full
  • Bake for 18 to 22 minutes or until toothpick inserted near the center comes out clean
  • Cool for 10 minutes before removing from the pan and allowing to cool completely
  • Add food coloring to the frosting and then frost the cupcakes
These cupcakes are very good! It was hard giving them away, but well worth saving the calories! I mixed the food coloring with the cream cheese frosting and let the vanilla icing stand alone and just dusted the tops with green sugared sprinkles. I liked how they all looked; it was a great contrast!
