Creole Shrimp and Sausage Stew

Last night I added a twist to the idea of normal soups with an AMAZING Shrimp and Sausage Stew. It had amazing flavor, considering it does not have any real condiment-like seasoning. I added one just to kick the spice up a notch, but other than that I did not add any salt or pepper; all of the flavors come from all of the other ingredients, and let me tell you the flavors are magnificent!


Servings: 4; Serving Size: approximately 1 cup

Here are the ingredients you will need:



  • 3 teaspoon olive oil
  • 1 green bell pepper, small dice
  • 3 links of hot turkey sausage, sliced thinly
  • 2 cloves garlic, minced
  • pinch of cayenne pepper
  • 1 cup + 2 tablespoons low sodium chicken broth
  • 1 (14 ounce) can diced tomatoes with green chiles, undrained
  • 10 ounces peeled and deveined medium shrimp, tails off
  • (if you wanted to add a can of kidney beans, add about 15 ounces, rinse them and drain them, I, of course, omitted this ingredients because I cannot stomach beans!)
  • Heat a large saucepan over medium - high heat
  • Add oil to coat bottom of pan
  • Add bell pepper, sausage and garlic to pan and saute for 5 minutes or until pepper is tender, stirring occasionally. I sauted for a couple of extra minutes because I wanted to make sure the pepper was thoroughly cooked and tender
  • Add broth and tomatoes to mixture and bring to a boil and let boil for a minute or so
  • Add shrimp [and beans if you use them]; cover and reduce heat. Let simmer for 6 minutes or until shrimp are done
This was such a great stew. I did not know what to expect because the ingredients are pretty simplistic. I used the hot turkey sausage because Nick and I really enjoy a kick in some meals. If you wanted to buy the mild sausage that would work perfectly!  This is best served hot and you could definitely serve it with bread. We paired it with some leftover French Bread, which just happens to be one of my favorite breads. Though this stew stands very strong on its own... ask me, I passed up the bread option! 
Another awesome aspect about this dish is that it is relatively healthy for you. For a cup of soup we are talking less than 200 calories. Can we say WOW! I've included the Nutritional Value below - be awed!!
