Oatmeal Raisin Cookies

I like to make a little something for Nick and his coworkers every week or every other week. It gives me a reason to make something I am craving and then send the majority of it away so I do not get into trouble by eating too much of it. In the midst of planning soup week, I wanted to make Oatmeal Raisin Cookies. I have been craving them for some time and they turned out very well! They are simple to make, so be careful if you are like me and find yourself craving these little guys because it will be super simple to make a batch and eat them all in an afternoon.


Here are the ingredients you will need:

  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 2/3 cup sugar
  • 2 eggs
  • 3 cups old-fashioned rolled oats
  • 1 1/2 to 2 cups raisins
    • I personally love having a lot of raisins in my cookies. If you do too, then just use 2 cups of raisins 
  • Heat oven to 350 degrees F
  • Whisk the flour, salt, baking powder and cinnamon together in a medium bowl. Set aside.
  • With an electric mixer set on medium speed, beat the butter at medium speed until creamy. Add the sugars and beat until fluffy, about 3 minutes.
  • Beat in the eggs one at a time. Turn the mixer to low speed. Add the dry ingredients and mix until just combined.
  • Stir in the oats and raisins.
  • Drop generous tablespoons of dough about 2 inches apart onto greased cookie sheet
  • Bake 15 to 18 minutes or until light brown. 
  • Check for doneness after 12 minutes and keep an eye on them so they do not burn!

These little guys are so good! Since I made them I have not been able to keep my mind off of them. I want to make them again soon, but I think I should wait and make a new kind of cookie. We will see how much longer I can hold out. I hope you all make these cookies and love them as much as we did!!
