Bacon, Egg & Cheese Breakfast Biscuit

Good Morning Everybody! I hope this finds you having had a great holiday weekend and an even better start to the work week. I had quite the weekend! My mom came down and Nick & I cooked away for her! She already left to go back home and I miss her. It is always sad to watch her leave. But I will focus on all of the great moments we had while she was here! And, plus, we are only a few hours away by car now! It will be very easy to see her now that we are in the same time zone!

Okay, let’s get down to all of the yummy food we cooked up this weekend! We made a lot of dishes and it took me a couple of minutes to actually think about what to blog today. That is a GREAT problem to have, especially because I was out of the kitchen for so long during our move! Today I have a great breakfast dish for you! It is cheap and easy to make – you will NEVER want to go out and buy this breakfast food again. Are you ready to know what I have for you today? Well, today, I present to you Bacon, Egg and Cheese Biscuit sandwich! These little guys are SIMPLE to make and SIMPLE to eat!

Let’s get down to business. Here is what you will need for the Biscuits:

  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/8  teaspoon baking soda
  • ¼  teaspoon salt
  • 1  teaspoon sugar
  • 1 tablespoon butter
  • 1 tablespoon shortening
  • ½  cup buttermilk, chilled


  • Preheat oven to 450 degrees F
  • In a large mixing bowl, combine flour, baking powder, baking soda, salt and sugar
  • Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs
  • Make a well in the center and pour in the chilled buttermilk

  • Stir just until the dough comes together – you want a very sticky dough
  • Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 6 or 8 times
  • Press into 1 inch thick round and cut out biscuits with a 2 inch cutter
  • Place biscuits on a lightly greased baking sheet so they are just touching

  • Reform scrap dough and work as little as possible and continue cutting
  • Bake until biscuits are tall and lightly golden on the top, about 15 minutes

  • While the biscuits are baking, cook bacon to desired crispiness and start cooking the eggs

For the Eggs:

  • 4 eggs
  • A couple of tablespoons milk
  • Salt, dash
  • Pepper, dash
  • Cayenne pepper, dash
  • Garlic powder, dash
  • Hot sauce, if desired


  • Whisk together all of the ingredients until the eggs are light and fluffy
  • In a greased medium skillet, over medium  heat add the whisked egg mixture and allow to cook until set
  • Flip the egg mixture like an omelet and allow the other side to set
  • After the egg mixture is cooked, remove from heat and cut into large chunks

Now assemble the sandwiches:

  • Cut the biscuits in half and while still hot add cheddar cheese, egg and a slice of bacon

Yep, it is THAT easy. Now eat away! I happen to love bacon, egg and cheese biscuit breakfast sandwiches and I have ALWAYS gone to a particular fast food joint to pick one up. I have been craving one for months, but resisted the urge to go and buy one. I figured this weekend was the best time to give making some a try. I am so glad that I did! It was well worth it and they were a huge hit!
