Happy Tuesday Foodies! I hope you all had a fabulous holiday weekend! I had a relaxing couple of days by myself. It was nice, but I did miss my beautiful soldier. He came home on Sunday night, so we were able to spend the day with each other yesterday.
Pippy thoroughly enjoyed Nick coming back on Sunday because he was incredibly sad. Dogs have great senses and Pippy has learned to expect Nick at a certain time each day; on Friday he waited a very long time for Nick to come home from work. At some point he realized that his dad was not coming home and he sulked around; he even selpt on Nick’s side of the bed this weekend! As sulky as Pippy can be, he can also be a hundred times more energetic and happy when he sees us after being away from him. So when Nick got home on Sunday, Pip jumped 3 feet in the air to greet him every two seconds the rest of the night. One of the cutest things Pippy did came at 3 on Sunday morning. Thinking Nick was not there or maybe he was just verifying that dad was still there, he walked over to Nick’s side of the bed, walked onto him and became super excited when he realized his dad was still there. It was the cutest thing in the world. However, I was asleep for the interaction. Figures.
Okay, enough of puppy discussion, let’s get down to business.
I know many of you probably grilled all weekend. If you are anything like us, you may have some leftover steak. There is nothing wrong with that; especially today, because I have an easy and light dish for you today. If you are anything like me, you may have eaten until you could no longer move this weekend. As a result, you may be thinking, ‘crap, I have to get back on the healthy wagon now that the holiday is over,’ but being healthy does not mean eating a rice cake or starving yourself. No. Fear not because I have an easy and healthy Steak Salad. This is a great way to use up your leftovers and still manage to get back on the portion control bandwagon!
Here is what you will need:
- Grilled steak, sliced as thin as you like
- Lettuce, shredded
- Cucumber, sliced thin
- Cherry tomatoes
- Carrots, sliced thin into matchsticks
- Shredded cheese
- Balsamic vinaigrette
- Freshly ground pepper
- Parmesan, sprinkled on top
- Assemble the lettuce onto the plate
- Add everything else in the order that you prefer
- Sprinkle with both cheeses, freshly ground pepper and some balsamic vinaigrette!
I’m telling you this; you will NEVER know that you are eating healthy with this salad. It is HUGE, healthy and packed full of flavor. Due in large part to the balsamic vinaigrette, steak and the vegetables! I hope you all enjoy as much as we did!!
