Happy Thursday Foodies! I am pretty exhausted this morning not having gotten home until midnight last night. It was well worth being out so late; if you do not know, Nick and I had dinner in DC with his sister, Chantelle, her boyfriend, Keith, and his parents one last time before Chantelle & Keith move to Cambodia to change the world. They will be there for almost a year and I hope the experience is everything they want it to be and more. They will be back sometime before next summer to make a decision as to whether they want to go back for another year. They are both amazing and I hope they have an incredible pilgrimage.
Last night we had sushi and I am a total addict, again. I generally gravitate toward other foods, but good sushi is an amazing experience. And last night we had some amazing sushi. Now I want some this weekend. Because I do not want to drive into the city to eat at this sushi place every weekend, I am on the hunt for a great sushi place closer to home.
I am sure Chantelle and Keith are happily in the airport right now waiting for their international flight filled with excitement and some anxiety, but looking forward to a wonderful trans-atlantic flight. I am not sure if they will ever read this post, but I love them dearly and wish nothing but the best for each of them in their journey to a developing country and hope the world treats them with as much ambition as they both have given to it.
Now, let’s move onto the food. Since Nick and I are too old to deal with late nights, I know that he is going to come home and want to eat a little something and go to bed early. It is funny how time changes our habits in life. So tonight I know that we will likely be enjoying some tortilla soup, which is our clutch recipe in situations like today. However, not everybody can eat tortilla soup once a week and not get bored; so today I give you something that incorporates that delicious tortilla soup but gives you a completely new meal. Today I give to you Tortilla Soup Infused Chicken and Rice Burritos.
Serving Size: 1 Burrito

Here is what you will need for one Burrito:
- 1 whole wheat tortilla
- ¼ cup cooked rice
- 1 ounce shredded cheese
- chicken breast, cooked & shredded
- ½ cup tortilla soup
- Instead of cooking your rice with water, use the tortilla soup. In a medium pot, bring tortilla soup to a boil, add rice, cover and remove from heat. Allow to sit for about 10 minutes. [You want to make enough rice for your family. Follow the directions for the ratio of rice to water that the box tells you, but use tortilla soup & maybe add a little more if your soup is a little thicker!]
- Once your rice is cooked, take a tortilla shell, spread about ¼ cup of cooked rice on the bottom of the tortilla.
- Add a couple of pieces of chicken and top with some shredded cheese
- Fold in the ends of the tortilla shell and wrap as tightly as you can

I love, love, love this dinner. One stuffed burrito is enough to fill me up for two meals; I am not lying to you. Nick could easily eat three of these guys, but according to his allotted points each day, he could totally eat three of these burritos every day!
