Hi Friends! Today is Thursday, can you believe that? It is hard for me to believe! I had a doctor’s appointment this morning. I am not going to weigh you down with silly problems creeping up in my life, but I will tell you the doctor’s office was a total drag this morning; he [the urologist] highlighted a particular situation in my life that he suspected may be causing some issues and he emphasized some things that really dampened my mood and put me down in the dumps. I don’t know what to say. I don’t know what to do; I mean, I know what I have to do, but it seems like an impossible task. Without going into personal details, I will try to create a ‘Because Life is Complicated Enough…’ in the days to come to highlight life’s difficulties and how the choices we make sometimes are not the right choices.
At the end of the day, I have an amazing, loving and supportive boyfriend; I have an incredibly compassionate and caring mom; and, a dog that will love me no matter what happens in life. I would like to think that those two people and my k9 will always be my constants. And that no matter what choices I make, how I look or feel they will always love me.
Currently, I am my own worst enemy.
What could make me feel better? Well, YOU for one; my foodies make me feel better every day. I smile during the day because of the conversations I have with you. I feel like nothing can be too overwhelming when I have a fleet of foodies who stop by to encourage me, support me and share with me each day. Where would I be without you all? One of the critical pieces to our foodie relationship is food, right? Today I have an awesome dish that is healthy and filling. It was a favorite of ours and packed full of spicy flavor. Today I give to you Spicy Cajun Sausage and Cabbage Soup.
Serving Size: 1 GENEROUS cup full

Here is what you will need:
- 2 teaspoons olive oil
- 1 onion, chopped
- 1 carrot, diced
- 2 celery stalks, diced
- 4 sausage pieces, sliced thinly
- 3 to 4 cloves garlic, pressed
- 8 cups water
- ¼ teaspoon salt
- ½ tablespoon pepper
- 1 small head green cabbage, shredded
- 3 potatoes, peeled and diced
- 1 to 1 ½ tablespoons Cajun seasoning
- Heat oil in large saucepan over medium heat
- Add onion, carrot and celery, cook, stirring until onion is softened
- Add sausage and garlic, cook, stirring, until garlic is fragrant and the sausage browns slightly
- Add water, salt, pepper, Cajun seasoning, bring to boil
- Reduce heat and simmer, partially covered for about 15 minutes
- Stir in cabbage and potato into soup, return to a boil
- Reduce heat and simmer, partially covered, until vegetables are tender, for another 30 minutes
This cabbage soup is off the hook good. I adapted the recipe from Weight Watchers and toward the end of cooking process I realized the soup was not as tasty as I wanted it to be, so I accidentally added 2 tablespoons of Cajun seasoning. And I do mean it was an accident. Most of my spices have those caps with the little sprinkle holes on top, so I just assumed my Cajun seasoning was the same. I forgot that it was not the same. Oh yes, I went to sprinkle in some Cajun seasoning and instead of sprinkling pieces of Cajun seasoning falling into my pot, I saw a bunch of spice dump in. I almost died. It turned out wonderfully though; so this was a good folly. I would not recommend doing it my way though. Be careful about the tops of your spices.
