Sausage, Egg and Cheese Mini Frittata's

Happy Friday foodies! This is going to be a post and run kind of day. I apologize in advance.

I do, however, have THREE exciting things to share with you; the first being about my second boyfriend.

I don’t know if any of you have caught that I have two boyfriends. Yes, two.  Now don’t go getting all worked up over this because Scott is actually my best friend, disguised as a second boyfriend to most. When he comes to visit I tend to walk side by side with him and I am sure people expect us to be dating; people just don’t picture a 5’5” chick weighing in at 110 pounds coupled with the 6’2” football player type. That would Nick, FYI. If you did not catch on to that! 

I don’t understand that.

I mean look at Kim Kardashian with Kris Humphries? Albeit a quickie marriage it was something of the little versus big relationship; her sister Khloe is in a similar relationship.

People just don’t get it.

But that’s on them.

Recognizing this, Nick usually takes my hand to assert to the world that we are together. I love that about him.

So the point?? Oh yes, Scott is visiting us for a few days. He came down last night and is leaving Monday. Can we say excited?! I am totally stoked.

Anyway, Nick is currently cooking brunch right now for everybody, while I type away. But because I have some self-diagnosed mutated version of A.D.D. I am having a difficult time focusing on anything else but them.

Darn boys.

Finally, the third exciting piece of information is I have a NEW recipe for you today. Oh yes, exciting! Today I give you Mini Sausage, Egg and Cheese Frittata's.

Nutritional Information:
Serving Size: 2 Fritatta’s; Servings: 5
Calories: 186.8
Fat: 13.9 g
Carbohydrates: 2.25 g
Fiber: .1 g
Protein: 12.2 g
Points+: 5

 Here is what you will need:

  • 1 sausage link, cooked and crumbled
  • 5 eggs
  • 3.5 ounces shredded cheese, your choice {I used Sharp Cheddar}
  • ¼ cup skim milk
  • ½ tablespoon hot sauce
  • Cayenne pepper, to taste
  • Garlic powder, to taste
  • Salt and pepper, to taste


  • Preheat oven to 350 degrees F
  • In a large mixing bowl, combine the eggs, milk, hot sauce, cayenne, garlic, salt and pepper. Whisk until the eggs are light and frothy
  • Now add the sausage and cheese to the egg mixture
  • Lightly grease a muffin tin
  • Using a measuring cup, fill 10 muffin cups almost full with the egg mixture
  • Bake for about 20 minutes, or until a toothpick inserted into the middle comes out clean
  • Remove and ENJOY! 

I love the idea of individual servings of things like fritatta’s because it allows everybody in your house to mix their favorite flavors together to customize their dinner. The best part about it is not labor intensive or become an inconvenience. I know plenty of you out there are short order chefs each night; you’re trying to cater to everybody’s tastes and wishes. This makes your life much easier – make everybody do it for themselves!
