Spicy Sausage, Cabbage & Rice Soup

Happy Hump Day, foodies! I did not blog yesterday; did any of you notice?! I am having a mini-mental crisis and I cannot pull myself back to the real world. I think it’s perfectly okay to mention it all to you, because today is weigh-in Wednesday, after all.

Can you guess what my crisis is?

Yep, I’ve gained weight.

Not a lot of weight. Really, it is a very miniscule amount, but it feels like so much more. You see, any weight gain for somebody who has lost an incredible amount of weight {like me} tends to be more of an intense situation. 

In theory, it should be easy to lose.

Yes, in theory, the world’s problems are easy to manage, too. See how a theoretical framework works? It’s not as easy as it sounds.

I am driving Nick nuts, too. Hell, I am driving myself nuts.

I think I need help.

Aside from my weight troubles, I do have great news about somebody’s weight in our little family.

Pippy went to the vet on Monday for a checkup – to see if he lost any weight and whether some of the problem areas the vet was concerned about decreased these last 5 weeks.

Pippy lost an ENTIRE pound! We were so excited!! I think we are going to start taking him for a walk every day {like we used to!} He still needs to lose another pound or so & we figure by walking him, we’ll manage to get some much needed exercise in, too.

Oh, not to mention that Nick has this wild plan to run a half marathon in a few months. I don’t think he’s worked out since he came home from Iraq. This should be an epic experience for me.

If you’re reading this Nick, I think you should participate in a half marathon, but later in the year.

I keep giving him the same two-cents, I’m sure he’s had enough of me. I am sure you will hear more about that in the days and weeks to come.

You would think my weight would be steady and Nick would be losing a lot considering each of my recipes are Weight Watchers friendly; nope. I think he’s cheating. But I cannot be the one that holds him accountable; he has to be accountable to himself. I’ll continue creating recipes that are healthy-inspired in hopes that it helps my readers and my boyfriend.

With that being said, take a look at this delicious Spicy Sausage, Cabbage and Rice Soup! It’s so good!

Serving Size: 1/8th of soup
Calories: 153.6

 Here is what you need:

  • 1 tablespoon canola oil
  • 4 cups chicken broth
  • 4 to 5 cups water
  • ¾ cup rice
  • 3 spicy sausage links, cooked and sliced thin
  • ½ head cabbage {large} or 1 head of a medium sized cabbage, shredded
  • 2 jalapenos, small diced
  • 4 cloves garlic, pressed
  • 1 to 2 tablespoons lime juice
  • Cayenne pepper, to taste
  • Chili pepper, to taste
  • Curry powder, to taste
  • Pepper, to taste


  • Sauté the sausage over medium heat until fully cooked through. Remove and allow to cool. When the sausage is cool, thinly slice each piece.  

  • Heat the oil in a large heavy pot over medium heat
  • Add the diced peppers and garlic and cook for about 5 minutes, or until fragrant and slightly softened. Towards the end, add the sausage.
  • Add the ½ of the lime juice, water and broth, bring to a simmer
  • Add the rice, cover and simmer for about 20 minutes or until the rice is soft
  • Shred the cabbage 

  • Add the shaved cabbage the other half of the lime juice and allow to simmer for another few minutes – just until the cabbage is hot
  • Remove & Enjoy!

I made another version of this back in August and it was such a hit! I changed up the flavors a little bit & added some rice. The rice really adds a different dimension to the soup. It makes it big heartier and filling {the soup itself is very filling, though}. Another added flavor, which I think does a lot for the dish, is the lime juice. That splash of citrus seems to bring everything together while stifling the bigger spices from getting out of control. It’s well worth adding it!
