Bacon & Eggies in a Cheesy Bread Cup

It’s a gloomy Monday in the Northern part of Virginia; it’s perfect. This morning was the best Monday morning I have had in quite some time because Nick was with me. Last night he got a notification that report time was delayed because of the impending ice expected over night, which meant that he could sleep in and spend some extra time with me this morning. I cooked him a great breakfast and that is what I am blogging about today.

This is an exceptional idea, but I cannot take credit for it! I would love to take credit for it.

Today I give to you Bacon and Eggies in a Cheesy Bread Cup.

Serving Size: 1 Eggie Cup
Calories: 152.5

Here is what you will need: 

  • 2 Eggs
  • 2 slices bacon
  • 2 slices of bread* {total bread usage – 1 slice}
  • ½ ounce American Cheese 

Directions: 

  • Preheat the oven to 375 degrees F and coat cupcake pan with spray
  • In a medium skillet, liberally greased with cooking spray, add the bacon. Allow to cook enough to render the fat and then remove. {It won’t look cooked. It’s okay!}
  • While the bacon is cooking, use a medium sized circular cookie cutter {about the size of a large glass} & cut out the middle of each slice of bread
  • Place each bread round in the bottom of the muffin tin
  • Put half of the cheese on top of each piece of bread
  • Now, take a slice of bacon and form a cup around the muffin tin. You want the bacon to encompass the entire bread round. I actually put the bacon in and slightly pushed the bread back down to the bottom so that it formed a nice cup
  • Gently crack your egg and pour it on top of the egg/cheese and within the bacon circle
  • Bake for about 10 minutes, or until the egg is cooked to your personal perfection
  • Sprinkle with salt and pepper
  • Serve & Enjoy! 

Nick LOVED these monsters. He shared a bite with me and it was heaven in a cup; seriously! They are a perfect morning breakfast item. I would suggest eating one {if you can} and pairing it with yogurt or lots of delicious fruit. It is the perfect breakfast combination!
