Beef with Broccoli

Hey foodies! How many of you love Chinese food?! Okay, okay – I hear the thunderous roar! Nick and I can appreciate good Chinese food, too. However, it’s always hard to choose what to order, especially for us. Do you want to know what happens?!

We end up ordering EVERYTHING.

Then we eat Chinese food for a week.




I hate spending that much money on mediocre Chinese food.

I have tried to make Chinese fried rice a couple of times in the past. It was never as successful as I wanted it to be. So instead of giving fried right another try, I decided to switch it up a bit.

Oh yes. I was not about to fail for a third time.

{Though I was very worried that this recipe was not going to work for me.}

You know what happens when skepticism overrides the love in the kitchen, right?


I am happy to report, though, that my dinner last night was SUCCESSFUL and it was Chinese food inspired!

Here is what you will need:

Adapted from Weight Watchers UK 

  • 2 ½ tablespoons cornstarch, divided
  • ¼ teaspoon salt
  • 2 teaspoons canola oil
  • 9 ounces Prime Rib, sliced thin
  • 1 ¼ cup chicken broth
  • 1 large bag frozen broccoli, slightly thawed
  • 3 cloves garlic, minced
  • ½ tablespoon red pepper flakes
  • ¼ cup low sodium soy sauce
  • ½ cup water


  • On a plate, combine 2 tablespoons cornstarch and salt; add beef and toss to coat
  • Heat oil in a large nonstick deep skillet over medium – high heat
  • Add beef and stir fry until lightly browed. {I used leftover Prime Rib. It only took a few minutes, but I wanted the meat to have a crisp taste}
  • Remove to a bowl and set aside
  • Add ½ cup chicken broth to the same pan. Add broccoli; cover and cook, tossing occasionally for about 3 minutes
  • Uncover pan, add red pepper flakes and garlic; stir until fragrant, about 1 minute
  • In a cup, stir together soy sauce, remaining chicken broth, cornstarch and water until blended. Stir into the pan
  • Reduce heat to medium-low heat and bring to a simmer. Simmer until the mixture is slightly thickened
  • Return beef to the pan, toss to coat and serve!! 

We really enjoyed this meal. The tender beef, mixed with the seasoning really came together for a perfect recipe. I was worried about the soy sauce {I always have a problem with the soy sauce being too overpowering!} Not this time!
