Sausage Pancake Bites

It’s Thursday.

I just found out that Nick will be out of town all of next week.

There was a small window of opportunity where I thought I would be traveling with him, but then he really upset me.

He will be traveling alone.

Therefore, it’s just Pipsqueak and I for a week.

Lucky us.

Can you sense my sarcasm? Oh, goodie! I am glad to hear that!

I have already created a list of things I want to make next week while he is away, so that stifles the blow slightly.

Anyway, let’s get on with it.

Yesterday, I gave you all a glimpse of some upcoming recipes. If you didn’t see the pictures, you should check them out here.

Today I am bringing one of those delicious pictures to life with a recipe.  Check out these fabulous Pancake Sausage Bites. I don’t know if you’ve seen the Dunkin’ Donut commercials advertising their pancake sausage bites lately, but I have. I had to try them; they were okay, but they were lukewarm and not packed with enough flavor.

I vowed as I was shoveling them into my mouth that I would attempt to recreate them and I did just that! Let’s get started!

Here is what you will need: 

  • 1 package maple sausage links
  • 1 cup bisquick
  • 1 egg
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • ½ cup milk
  • 3 tablespoons flour
  • Oil for frying
  • ¼ cup maple syrup*


  • Preheat deep fryer to 325 degrees F
  • While the deep fryer is heating, prepare the sausages
  • Heat a large frying pan over medium – high heat. Cook the sausage links as per directions. While cooking, sprinkle the sausage links with the brown sugar, making sure eat is slightly coated with the sugar
  • Remove from heat and set aside
  • In a large mixing bowl combine the bisquick, egg, sugar, and milk together to create a thick pancake batter. You may need a little extra milk to thin the batter down during the process
  • Cut the sausage links in half
  • On a plate, sprinkle the flour and then roll each of the sausage links in the flour. Then coat the links in the pancake batter; using an ice cream scoop or spoon, scoop each link into the deep fryer and allow to cook for 2 to 3 minutes, until the little balls are nice and golden
  • Remove to a paper towel to allow the grease to drain off
  • Now comes the fun part. If you  have one of those old fashioned ketchup/mustard containers, fill that up with the syrup. Take each pancake bite and inject it with a small amount of the syrup & enjoy!


We absolutely loved these little bites! I actually have another concoction coming down the line very soon; same idea, just a slightly different surprise on the inside! I hope you all give these little guys a try!
