Loaded Potato Wontons!

I cannot believe it’s the first of February. I have the windows open in the office right now and it’s not even cold. Where the heck is winter? It’s my favorite season and I haven’t even gotten a good glimpse at it. 

I am starting to think that I will have to move to Alaska to experience a true winter. We will see.

It’s Wednesday and the third day in Super Bowl Snack Week. Today I have a particularly awesome recipe for you. I like pierogies, but I don’t like making the dough. It never turns out the way I want it to. So I got this brilliant idea. Instead of making a traditional pierogi, maybe I could make my own version of it. And that is just what I did. I stuffed wonton shells with loaded potatoes and it was heaven on Earth!

They were the perfect combination of crunch, potato, bacon and cheese!  Whether your team wins or loses, you will be glad you had these on your table! I promise!

Here is what you will need: 

  • 1 potato, cooked and mashed
  • Splash of milk
  • 2 ounces cheese, shredded & divided
  • 2 slices of bacon, cooked crispy, crumbled & divided
  • 12 wonton wrappers
  • Bowl of hot water
  • Hot Sauce {optional} 

Directions:

  • Preheat oven to 400 degrees F
  • Cook your potato as you normally would. When it is done, add the splash of milk, 1 ounce cheese, 1 slice bacon crumbled
  • Fill each wonton with a small teaspoon of the potato mixture

  • Moisten the edges of each wonton, fold it into a triangle so the potato is covered and seal the edges firmly.
  • Line the wontons up on a baking sheet and bake for about 10 minutes, or until the wontons are a nice golden brown
  • Remove and drizzle some melted cheese over each and crumble the remaining bacon on top of each!
  • I also drizzled a little bit of hot sauce over each of them! It was the perfect amount of heat for the dish!
  • Enjoy!

You could easily enjoy some fresh chopped green onions and melted sour cream with these little guys. I opted against it. I am not a huge fan of sour cream and we did not have any green onions. They were perfect without either one of them.

I think these would be the perfect addition to any super bowl bash; it’s a perfect hybrid of wontons and pierogies!
