V-Day Chocolate Pancakes

Happy Day before Valentine’s Day! Has there ever been empirical research done answering the question: Why are Monday’s so rough? If not, somebody must take this project on. I have tried to scoff at that idea of Monday’s being worse than other days, but today it is very hard to deny; I’m really dragging. 

I think my poor rapport with Monday has something to do with a shaky weekend. Nick and I really butted heads all weekend; it has a lot to do with our stubbornness and our strong headedness. I hate arguing with Nick. It makes my life stinky and it gives me anxiety.

Anyway, we bumped heads all weekend and Pippy tried to comfort me, which makes Nick itch on the inside. I mean, he was deployed and Pippy trusted in me for more than a year. I was his only caregiver and there is nothing like a momma bear taking care of a Pippy bear. I don’t think he loves me more, but he looks to me in moments of stress, in good times and when I’m having a bad time. He’s the most loyal creature I have ever known and I don’t know where I would be without my little Pork Chop.

Anyway, long story short – even though I feel gross on this Monday morning, I am so glad the weekend is O-V-E-R!

Even though Nick and I had an off couple of days, I still wanted to make something special for him for breakfast yesterday. I mean, Valentine’s Day is tomorrow and I knew I was not going to be able to make him breakfast at 4:30 in the morning before he leaves. I got this brilliant idea to make V-Day Chocolate Pancakes. They are fabulous.

Here is what you will need:

  • 1 ½ cups bisquick
  • 9 ounces Brownie Mix {about ½ of your favorite box}
  • 2 eggs
  • 1 cup milk
  • Chocolate Syrup {optional}
  • Whipped Cream {optional}
  • Sprinkles {optional} 


  • Preheat your skillet to 375 degrees F
  • Lightly grease the skillet
  • In a large mixing bowl, combine the bisquick, brownie mix, eggs and milk. Stir together until there are minimal lumps
  • Pour ¼ of the mixture onto the skillet and cook the pancakes until they are done to your liking
  • Remove to a plate and pour a tablespoon of the chocolate syrup over your pancake stack, add 2 tablespoons whipped cream & top it off with some red or pink sprinkles {if you want to!!}

These were so good. They are the perfect hybrid of pancakes and brownies; really, they are awesome!! I love the syrup, whipped cream & sprinkles. It gives the breakfast a little something special. And for only a couple of extra points, it is a perfect brunch for anybody!
