Valentine's Day Steak & Eggs!

Happy Valentine’s Day Everybody! I know many of you think it’s an exploited Hallmark holiday, but there is an actual story behind the gift of Valentine’s Day. My pastor posted it on Facebook this morning and I felt a sense of satisfaction that love has permeated so deep for so many centuries. Today I treasure the blessings I have and the love that I have in my life. I may not have a huge family or lots of friends to celebrate with, but I have the love of my life and our fur baby.

I am so blessed everyday; even bad days.

I told you yesterday that Nick and I really butted heads this weekend. I brought it up casually yesterday, a simple today is better than this weekend statement and he did what he always does; he said the weekend was not bad and it could have been much worse. It put an instant smile on my face and every anxiety filled moment disappeared immediately, it was like none of it ever existed and our path was filled with songs and unicorns.

I love my hero.

I planned on making Valentine’s Day fudge for him to take into work for his friends today, but it did not turn out the way I expected it to. One thing you should know about me is that I am a serious perfectionist. Now don’t think that I go crazy when all things are not perfect, that is not the case. I mean, I do go crazy when I want something perfect, but I am well aware that life cannot always be perfect. I simply mean that I work hard to accomplish goals and will not present things to people otherwise. Because my fudge was not perfect I refused to send it into work with Nick. I was disappointed. Really. I was disappointed.

To cheer myself up I decided that I would make Nick a phenomenal dinner. Sounds corny, huh? Well, sometimes cooking a nice dinner cheers me up & last night our dinner was – out – of – this – world delicious. Nick loved his Valentine’s Steak & Eggs.

Here is what you will need: 

  • 3 ounces steak
  • 1 egg
  • ¼ cup Mango Peach Salsa, recipe follows
  • Salt
  • Pepper


  • Heat a cast iron skillet or regular skillet over medium high heat. Generously grease it with cooking spray
  • Sprinkle the pan with sea salt and pepper
  • Sprinkle eat side of the steak with salt & pepper
  • When the skillet is nice and hot, sear the steak on both sides – a few minutes on each sides should give you a steak that is medium. Cook more or less depending on the desired doneness
  • While the steak cooks,  prepare your egg{s}. In a small skillet, heat over medium heat and grease with cooking spray
  • When the skillet is hot, put a heart shaped cookie cutter in the center of the pan and crack your egg into the center of the cookie cutter. Make sure you press the cookie cutter down into the pan to maintain the heart shape
  • Cook the egg until your desired doneness, approximately 4 to 5 minutes for all of the egg white to completely set & cook through
  • Remove the egg and steak from heat. On a plate, place the salsa in the middle of the plate and spread it slightly to create a bed for the steak to be placed on
  • Place the steak on top of the salsa and top the steak with the heart-shaped egg
  • Sprinkle with salt and pepper if you want to
  • ENJOY!

Recipe for Mango-Peach Salsa

 Adapted from Sunny Anderson

  • 1 to 1 ½ cup chopped fresh tomatoes
  • 2 peaches, peeled and medium dice
  • ½ cup chopped red onion
  • 1 to 2 jalapenos, seeded and finely chopped
  • ½ cup sweet yellow pepper
  • 3 to 4 cloves garlic, minced
  • 1 teaspoon fresh lime juice
  • ¼ cup minced fresh cilantro
  • ½ tablespoon sugar {optional}
  • Salt and ground pepper


  • In a large bowl, combine the ingredients. Cover and refrigerate until serving! 

Mango-Peach Salsa has to be one of my FAVORITE salsas in the entire world. It is perfectly sweet and spicy and goes well with anything. I mean it. If you remember, I have made Chicken Enchilada’s with it and I could easily eat it by the gallon. It paired nicely with the steak last night. I was unsure how it would work with the egg, but it was PERFECT. All of the flavors came together to form an amazing explosion flavors. I hope you give the salsa & this meal a try sometime. It’s super simple!
