Cilantro Lime Rice

Good Morning Foodies.  My hands and mouth are dyed blue. It has a lot to do with the fact that I just downed a couple of handfuls of frozen blueberries. I am trying not to down the rest of the pound we have. I cannot eat them fast enough, which means I have no tolerance for putting the blueberries in a dish and eating them one by one or with a spoon.

I am not shy about announcing to the world how much I love winter and snow. In fact, Nick and I have talked about moving to Alaska.

Well, by moving I mean taking a deployment there.

Yeah, right.

The only problem is the fear of not having consistent heat because that would be a problem for me. I am small enough that a crisp air permeates through my body and gives me a chill that I cannot shake. Needless to say, we have not moved to some far off snow filled place.

However, I do love spring and summer for a VERY important reason: the FRUIT. I LOVE fruit. I love all of the fresh fruit that is at my disposal each year; and, I love how inexpensive it all is. I swoon through all of the stands picking up whatever I want. In reality, I will likely fill up on all of the fruits during the day and not eat a real meal for days. I guess that is good and bad. I cannot wait to stuff myself with delicious sweet and tart fruit.

Until then you are stuck with me complaining about having no snow and no fresh fruit.

Okay, moving right along.

I’ve been talking about Mexican food all week; and, I am notorious for highly suggesting going out to a restaurant when it comes to Mexican food. I love eating it, but sometimes making it is a hassle. However, I took the plunge this week and made a couple of delicious dishes. Each of the dishes highly incorporates one of my favorite things: Cilantro Lime Rice. So, that’s where we will start. It’s a simple recipe, but the lime juice adds great flavor. If you don’t believe it is that good, go ahead and make some. Ordinary rice is transformed into something incredible!

Here is what you will need:

  • 1 cup rice
  • 1 cup water
  • 3 to 4 tablespoon freshly squeezed lime juice {as an alternative, use the bottled stuff}
  • 2 to 3 tablespoons freshly chopped cilantro
  • Salt & pepper {optional}


  • Over high heat, bring the water to a rolling boil
  • Add the rice and lime juice. Remove from heat and cover. Allow to rest for about 25 minutes.
  • Chop up the cilantro, and incorporate the cilantro throughout the rice mixture

Enjoy it with a nice piece of chicken or under a delicious seared steak OR utilize it in all of your Mexican dishes. I’ve got a couple of ways to use it up coming in the days ahead.
