Prime Rib Grilled Cheese Sandwich

I don’t know about you but the last week has been a complete whirlwind for me. Beginning on April Fools Day and likely not ending until November. Last week Nick and I found the perfect home for us and we began to finalize everything yesterday. In between we have visited the property a couple of times, we have done lots of research, we have fired a realtor, enjoyed Easter dinner with both of our parents and numerous other things. Our lives have been continuous, exciting and exhaustive. For that reason I have not made any new recipes. I apologize. I know my website is primarily a food blog, yet I have given you only one recipe for the past week. Hopefully I will be more consistent with my delivery in the days to come. I do have a great one for you today.

When we invited our parents down for Easter we knew we had to cook something special. We both decided on Prime Rib and Ham. I gave Nick the creative leeway to do with the prime rib and ham as he pleased {sort of}. I could not allow clove seasoning to go on the Ham; cloves and clove flavor makes me gag.


Other than that, he did what he wanted with little guidance or opinion from me. I know that’s hard to believe, but we decided to smoke the meat and that is Nick’s expertise! It was great! That allowed me to have low maintenance Easter dinner preparation. So of course I made macaroni & cheese and broccoli slaw. Go check out both recipes, I promise you will not be disappointed.

In order to utilize some of the leftovers I decided to make a grilled cheese. Oh yes, you read that right – grilled cheese.  Take a look at this Prime Rib Grilled Cheese sandwich!

  • 1 ounce Prime Rib, sliced thin
  • 1 ounce Blue Cheese, crumbled
  • 2 sliced bread
  • 1 egg {or 2 depending on whether you want to split this in half}
  • 1 tablespoon butter
  • hot sauce {optional}


  • Heat a medium sauté pan over medium heat
  • Butter the outside of each slice of bread, set aside
  • In the sauté pan, sear the prime rib. I added some hot sauce to the mix, you don't have to. After it is heated through set the meat aside
  • Slightly grease the same sauté pan with cooking spray
  • Fry the egg to your liking then set aside
  • Now take a slice of the buttered bread and grill it in the sauté pan. When it is perfectly grilled remove to a plate. Layer it with the prime rib and then the egg.
  • Do the same thing with the other slice of buttered bread, but with this slice add the crumbled blue cheese and grill until golden brown and the cheese begins to melt.
  • Place on top of the prime rib and egg & ENJOY!

You may need an extra slice of bread to soak up the bit of yolk that will leak out when you star to enjoy this super delicious sandwich, but do it without guilt. That’s the only way to eat this sandwich.

I will tell you this, I could not eat the entire sandwich, and many of you may want to make two eggs, but split the sandwich in half and share with your hunny. That way each of you has an egg, then pair it with some veggies or a great big salad. That will make it feel more like a meal and you will feel less guilt when you bite into all of the fantastic flavors that come along with this sandwich. But that’s just my opinion.
