Double Crispy Onion Rings

Good Monday Morning foodies! I hope you all had a great weekend, I sure did. To start, I spent several hours lounging by our salt-water pool, which I love so dearly. I was successfully able to recruit Nick to join me for a period of my sun bathing excursions. Unfortunately, however, the sun got me. It got me good. The first day it got me on my front, the second day it got me on my back; however, I got especially crispy on my backside. I attempted to equal the redness playing field yesterday by lathering on the sunscreen on the backside and on all of the red areas on the front side. I had this brilliant vision by doing that I would some how be equally red all over.

Nope. That didn’t happen.

Now I have patchy red areas all over.

I’m staying inside today. I have plenty of things to do, including writing blog posts, editing pictures and doing research for a client. Not to mention, there is no way I’m going to strike out in the sun today… again. I think my entire body needs a break and the water in the pool is slightly too cold for me. I love being in the water, yet I tend to sit in the sun to read when the water is not warm enough.

The odds are not in my favor.

Instead I’m thinking about all of the food I want to eat, especially these Crispy Onions Rings that I made last week. Can I tell you they were an absolute hit in our house. I bought two onions, but only needed to use one. So we still have one to fry up… and I will be frying the other one up!

Let’s get down to it. While you drool over the pictures, don’t forget to take a look at the recipe. It’s a pretty good one!

Ingredients:

Recipe Adapted from Get Off Your Butt and... BAKE!

1 LARGE Vidalia Onion

1 cup milk

3 eggs, beaten

1 tablespoon salt

1 tablespoon Splenda

2 cups Bisquick

Directions:

Slice the onions crosswise and separate into rings

Combine milk, eggs, salt and Splenda into a mixing bowl

Soak the onions in the mixture for about 30 minutes {I let them soak in the refrigerator}

Preheat oven to 350 degrees F

Place pancake mix in a shallow bowl

Heat oil to 375 degrees F

Remove the onion rings from the milk mixture, dip in pancake mix and repeat the process!

Place the coated rings in hot oil

Fry rings until golden brown and drain on paper towels

During each of the batches, place the rings just fried in the oven on a baking sheet {this will keep them crispy and warm!}

Serve with some ketchup and ENJOY!

See how super easy they are to make? They are easy enough to make, yet are kind of high maintenance. One of my least favorite things to do in the kitchen is dredging ingredients.

It stinks!

It takes me so long to do and it is a very messy project! If you can get past that {and I usually can} these little guys will be an instant hit!
