Mediterranean Meatball Pizza

I am totally in love with Mediterranean food. I think that I could live the rest of my days in that part of the world gorging myself with delicious variations of spices and meat, vegetables and sauces. I would walk around chubby and with a big smile on my face. And, honestly, I don’t think I would care much.

I remember when I went to Europe for the first time. I had started Weight Watchers the summer before and was on my way to making some drastic life changes. I feared going to a place like Italy whose streets were lined with classic shops filled with rising dough, pasta and every kind of delicious cheese I had ever dreamed about. I knew I would fall off of the weight loss wagon and eat everything I could get my hands on; and, I did. I ate gelato, crepes filled with Nutella oozing out all over my fingers and face, I craved pizza and pasta and breads. I ate everything I could get my hands on whether I was in a five star Italian restaurant or prancing around the street vendors down the street from the Coliseum. I threw weight and points to the wind and ate everything during my short stint there.

I think I could do the same in Greece and Turkey and all of the ancient vendors lining the coast of the Mediterranean.

{Oh on a side note: when I weighed in that next week I had lost 8 pounds. I walked my butt off to see everything in Roma that I had once learned about taking 4 years of Latin classes. We all need to walk more!}

Last week I tried Mediterranean Meatballs for the first time. I don’t know how I lived my life without them until now, but that is going to change! In order to spice up my life a little I used the leftovers for none other than a Mediterranean Meatball Pizza! Oh, yes, I hear the gasps. They are well worth it, too! Take a look!

  • 1 thick crust pizza dough {make your own if you can!}
  • ½ ounce feta cheese or whatever you have on hand
  • 5 or 6 Mediterranean Meatballs in Sauce

  • Preheat oven to 400 degrees F
  • Roll out the pizza dough and precook it for about 6 minutes, or until it has a golden brown tint to the top and bottom
  • Remove and set aside. At this point the meatballs and sauce should be done. Lather a bit of the sauce on the bottom of the pizza dough {not to much though}
  • Place meatballs sporadically around the dough
  • Sprinkle with the feta or shredded cheese
  • Bake for an additional 10 minutes or until the pizza crust is completely golden in color
  • Remove, cut and SERVE!

This pizza can be served with some Greek salad, bread or anything you could cook up! Nick and I really enjoyed this, partly because we LOVED the meatballs. Soon you’ll get the recipe for the meatballs, now that I know I love them I have to make them on my own!!
