Chocolate & Caramel Twix Popcorn

I happen to love being outside in the summertime, especially when the sun is shining and the water in the pool is warm. However, I dislike all of the bugs that come along with summertime, especially bees, wasps and anything that buzzes or has the potential to sting or bite me. Lately I have noticed these ginormous bees or wasps around the property. I mean it they are G-I-N-O-R-M-O-U-S! Oh and they live in the ground. On Sunday Sophie was digging her nose into the ground, like usual, and all of a sudden something started to buzz its way out of the ground where we were standing. I immediately realized that it was one of those huge buzzing bees; instantly I grabbed her and ran away. Oh yes, I RAN away. I am terrified of things like that. Now I am paranoid to go outside in fear that I will see one. Case in point: I saw one this morning in another location buzzing around. I hurriedly walked Pippy and Sophie away from that area.

I have chills just thinking about those things.

I researched them online and decided they are grounds wasps or ground bees or some freak combination of both that make them humongous. One of the warnings was don’t wear sweet smelling scents, don’t take sugary drinks and the like outside. Um, crap. I like my perfume. I love sweet and sugary drinks. AND I love sweet treats every now and then. You know what that means? The recipe I have for you today cannot be eaten outside for fear of being attached by a freak specimen of bee.

That’s okay though because you can totally eat this Chocolate & Caramel Twix Popcorn!

Recipe Adapted from Two Peas and Their Pod

5 quarts popped popcorn {2 to 3 regular bags}

½ cup butter

½ cup I Cannot Believe It’s Not Butter

2 cups light brown sugar

½ cup light corn syrup

1 teaspoon salt

½ teaspoon baking soda

1 teaspoon vanilla extract

4 or 5 King Sized Twix Candy bars, chopped

1 ½ cups chocolate chips, melted to drizzle over popcorn

Preheat oven to 250 degrees F

Place popcorn in a large bowl and set aside

In a medium saucepan over medium heat, melt butter

Stir in brown sugar, corn syrup and salt

Bring to a boil, stirring constantly

Boil without stirring for 4 minutes

Remove from heat and stir in baking soda and vanilla extract

Pour caramel in a thin stream over popcorn, stirring to coat

Gently stir until all of the popcorn is covered

Place popcorn on two large shallow baking sheets and bake in preheated oven, stirring every 15 minutes for about an hour

Remove popcorn from oven and let cool completely

Break popcorn into pieces and mix in the Twix candy bars

Drizzle popcorn with melted chocolate

Let the popcorn sit until chocolate hardens, about 30 minutes

Store at room temperature in an airtight container

This makes a ton of popcorn so be prepared!
