Bacon Double Cheeseburger Dip

I don’t know how people have children; Nick and I are not planning to have anything but fur-babies. As I sit here and watch Sophie torment and annoy Pippy I can only imagine how much worse having human puppies must be when it comes to annoyances between brother and sister, competition, sharing, etc. Oh and not to mention potty training, getting into trouble and the myriad of other things that goes on during the tender 18 years you are solely responsible for them.

“Potty” training Sophie is going okay. I would say 98% of the time she is doing her number 1 outside and about 65% of the time she is doing her number 2 outside. I don’t know what the process is for training humans but I will tell you it is entirely unacceptable to have a monopoly on a single bathroom at a gas station. For example, yesterday Nick and I were driving back from Pennsylvania and stopped to get gas, which was a perfect time to go to the bathroom. I was becoming increasingly annoyed that a woman was taking this much time in a single bathroom designated for women. I was getting even more annoyed that grown women were going into a heavily grungy and disgusting men’s bathroom because of this woman. I had invested too much time to walk away and then THE MOTHER showed up. She explained that her daughter was potty training her 2-year-old son and I should use the men’s bathroom. My response was simple: “No, I don’t think so.” She was not exactly cordial. Nick suggested that her daughter move to the men’s room if she was going to continue this bathroom monopoly so that the women could use the bathroom that was clean, especially because she was not using the toilet… her son was using a baby toilet.

Reason number 56 not to have kids.

Now that I’ve vented, I’m ready to share with you this very delicious recipe for Bacon Double Cheeseburger Dip. Hello? Knock, knock, knock, did you read that?! Bacon Double Cheeseburger Dip! Take a look!

Ingredients:

Recipe Adapted from Closet Cooking

½ pound ground beef

6 strips bacon, cooked and cut into small pieces

1 small onion, small dice

3 cloves garlic, pressed

4 ounces cream cheese, room temperature

½ cup sour cream

½ cup Greek Yogurt

1 ½ cup cheddar cheese, shredded

½ tablespoon Worcestershire sauce {optional}

2 tablespoons ketchup

Directions:

Preheat oven to 350 degrees F

Cook ground beef in pan over medium heat, set aside and drain the grease from the pan

Cook the bacon in the pan until crispy, about 6 – 10 minutes, set aside and drain all of the grease from the pan

Add the onion and sauté until tender, about 5 – 7 minutes

Add the garlic and sauté until fragrant, about 2 minutes

Mix the ground beef, bacon, onions and garlic, cream cheese, sour cream, Greek yogurt, cheddar cheese, Worcestershire sauce and ketchup

Pour into a baking dish

Bake for about 30 minutes, or until the top starts turning a light golden brown and the sides bubble.

Voila! You’re done. I served this with thinly sliced pieces of baguette. I love baguette. I fell in love with cheese and bread under the Eiffel Tower and never looked back!
